Transferring Low Viscosity Commercial Bakery Release Agents with Food Grade Oil Pumps

When choosing bakery release agents one must choose wisely as making a mistake in this process could be detrimental to a product’s value as it can cause defects.

What is a bakery release agent? A release agent is used to separate the baked product from the cooking container. The most common substances comprising release agents include the following: soybean oil, sunflower oil, coconut oil or food grade mineral oil. These release agents are sprayed on pans, conveyor belts and screens.

Graco's Solution for Transferring Release Agents in Commercial Bakeries

Release agents are low in viscosity and Graco pumps are used to feed spray nozzles at low flow rates. The most common Graco pumps used for this application are SaniForce 2:1 and FDA 515 pumps to accommodate low flow requirements. Many end users still use the Monark 4:1 with the stubby lower.

How does it work?

The oils are pumped from pails and drums. Then, the pumps feed sanitary spray nozzles supplied by companies such as Spray Systems or Lechler. Finally, pulsation is reduced at the spray nozzles when using either dampeners, fluid regulators or accumulators.
